Curried Lentils

Here's an easy, tasty, satisfying, healthy dish for you.

Curried Lentils

Bring to boil and simmer 20 minutes:
1 c lentils
3 c water
2 beef bouillon cubes
1 bay leaf
1 t salt

Meanwhile, sauté:
¼ c margarine
1 large onion, chopped
1 clove garlic, minced
1 t salt
1-2 T curry powder
Fry briefly and add to cooked lentils, along with:
2 T lemon juice
chopped parsley

Serve over rice.
(Serves 6)
